1 tbsp oil
500g potatoes, diced
500g leeks, washed and sliced
700ml chicken or vegetable stock
300ml semi skimmed milk
Heat the oil in a large saucepan and fry the potatoes and leeks for 5 minutes, stirring occasionally.
Add the stock and bring to the boil. Simmer covered for 10-15 minutes or until the potatoes are tender.
Stir in the milk and bring back to the boil. Pur�e with a hand blender or in a food processor. Season to taste.
Fry diced potatoes and sliced leeks for 5 minutes, stirring occasionally. Add chicken or vegetable stock and bring to the boil. Simmer covered for 10-15 minutes or until the potatoes are tender. Stir in milk and bring back to the boil. Pur�e with a hand blender or in a food processor. Season to taste. Serve with fresh bread.
